ground beef stir fry with cauliflower rice

  • 2 tbsp grass fed ghee

  • 1.5 lb grass fed ground beef

  • 2 cloves garlic, minced

  • 1 small yellow onion, sliced

  • 2 carrots, peeled and sliced

  • 1 medium head broccoli, chopped

  • 1 tsp minced ginger (or ½ tsp ground)

  • ⅓ cup coconut aminos

  • 2-3 tbsp lime juice

  • Sea salt, to taste

  • 1-2 tbsp sriracha, to taste (optional)

  • Sesame seeds (for topping)

  1. Melt ghee in large skillet or wok over medium high heat. When hot, add onion. Cook for about 3 minutes, then add garlic and stir.

  2. Add broccoli and carrots. Saute for about 4-5 minutes.

  3. Add ground beef and cook, breaking it apart with a wooden spoon, until nearly cooked through - about 8 minutes.

  4. Add your minced ginger, coconut aminos, lime juice, salt and sriracha. Stir to mix all ingredients together. Cook until most of your liquid has soaked up, about 5-10 minutes.

  5. Serve with cauliflower rice! (see recipe below)

CAULIFLOWER RICE: buy pre-cut cauliflower rice. It’s worth it. Heat a large skillet on medium high heat, and add cooking fat of choice when hot. Once the fat is hot, add cauliflower rice and a little sea salt, and saute for about 30 seconds. Cover and cook for about 8 minutes, stirring occasionally. Uncover and cook another 3-4 minutes or so, until moisture cooks out and rice begins to brown. Remove from heat and serve.
