Ground Beef Stir Fry with Cauliflower Rice
ground beef stir fry with cauliflower rice
2 tbsp grass fed ghee
1.5 lb grass fed ground beef
2 cloves garlic, minced
1 small yellow onion, sliced
2 carrots, peeled and sliced
1 medium head broccoli, chopped
1 tsp minced ginger (or ½ tsp ground)
⅓ cup coconut aminos
2-3 tbsp lime juice
Sea salt, to taste
1-2 tbsp sriracha, to taste (optional)
Sesame seeds (for topping)
Melt ghee in large skillet or wok over medium high heat. When hot, add onion. Cook for about 3 minutes, then add garlic and stir.
Add broccoli and carrots. Saute for about 4-5 minutes.
Add ground beef and cook, breaking it apart with a wooden spoon, until nearly cooked through - about 8 minutes.
Add your minced ginger, coconut aminos, lime juice, salt and sriracha. Stir to mix all ingredients together. Cook until most of your liquid has soaked up, about 5-10 minutes.
Serve with cauliflower rice! (see recipe below)
CAULIFLOWER RICE: buy pre-cut cauliflower rice. It’s worth it. Heat a large skillet on medium high heat, and add cooking fat of choice when hot. Once the fat is hot, add cauliflower rice and a little sea salt, and saute for about 30 seconds. Cover and cook for about 8 minutes, stirring occasionally. Uncover and cook another 3-4 minutes or so, until moisture cooks out and rice begins to brown. Remove from heat and serve.
